This Kale, Apple & Raisin Salad is a very healthy and delicious salad for all you Kale haters out there!!! If you attended my Mindful Eating workshop at the York Pagan Pride Day this past weekend, you got to sample the amazing salad. It is inspired by a friend’s recipe she shared with me over a year ago. It is awesome with grilled chicken, goat cheese or grilled pork. The dressing also makes a killer marinade for beef, pork, and chicken.
Kale, Apple & Raisin Salad
- 4 cup packed finely chopped raw kale Chopped
- 1 large Gala chopped cut into bite-size pieces
- 1 cup carrot Juillene cut
- 1/2 cup walnuts Chopped
- 1/4 cup raisins
- 2 clove garlic finely minced or pressed
- 2 tablespoons honey
- 1 tablespoon Dijon Mustard
- 1/3 cup balsamic vinegar
- 1 teaspoon fresh grated ginger
- Salt and pepper to taste
- 1 cup olive oil
Add all the ingredients for the dressing up to the oil into a medium bowl. Slowly whisk in the oil until the dressing becomes lighter in color and thickens. Set aside.
Toss all the ingredients together in a large bowl. Drizzle with dressing and toss to coat. Serve immediately.
