Slow Cooker Carnitas

Ingredients

  • 1 1/2 tablespoons chipotle peppers in adobo sauce
  • 1/2 tsp salt
  • ½ tsp Dry Mustard
  • 2 tsp ground cumin
  • 1/2 tsp red pepper flakes
  • 1 2-pound boneless pork loin roast
  • 2 cups chopped onion
  • 6 garlic cloves pressed
  • ¼ cup all-purpose flour
  • 1/3 cup dry red wine
  • 2 1/2 cups coarsely chopped tomato about 1 pound
  • 2 tablespoons chopped fresh cilantro
  • Corn Tortillas
  • Cilantro
  • Lime Wedges

Instructions

  1. Combine first ingredients up to the pork in a medium bowl. Add pork, toss to coat.
  2. Heat a large nonstick skillet over medium-high heat. Add pork to pan. Brown pork on all sides. Place pork in an electric slow cooker.
  3. Reduce heat in your pan to medium, sauté onions for about 5 minutes.
  4. Stir in flour. Add wine, scraping pan to loosen browned bits. Add tomatoes and stir.
  5. Spoon onion mixture over pork. Cover and cook on LOW for 6 hours or until pork is tender.
  6. Serve on corn tortillas; sprinkle with cilantro and a squeeze of lime juice.

Recipe Notes

If you have leftover Carnitas, try making this into a sandwich. It’s a pleasant surprise!
