Slow Cooker Carnitas

Ingredients
- 1 1/2 tablespoons chipotle peppers in adobo sauce
- 1/2 tsp salt
- ½ tsp Dry Mustard
- 2 tsp ground cumin
- 1/2 tsp red pepper flakes
- 1 2-pound boneless pork loin roast
- 2 cups chopped onion
- 6 garlic cloves pressed
- ¼ cup all-purpose flour
- 1/3 cup dry red wine
- 2 1/2 cups coarsely chopped tomato about 1 pound
- 2 tablespoons chopped fresh cilantro
- Corn Tortillas
- Cilantro
- Lime Wedges
Instructions

Combine first ingredients up to the pork in a medium bowl. Add pork, toss to coat.

Heat a large nonstick skillet over medium-high heat. Add pork to pan. Brown pork on all sides. Place pork in an electric slow cooker.

Reduce heat in your pan to medium, sauté onions for about 5 minutes.

Stir in flour. Add wine, scraping pan to loosen browned bits. Add tomatoes and stir.

Spoon onion mixture over pork. Cover and cook on LOW for 6 hours or until pork is tender.

Serve on corn tortillas; sprinkle with cilantro and a squeeze of lime juice.
Recipe Notes
If you have leftover Carnitas, try making this into a sandwich. It’s a pleasant surprise!
