I make this at least once a week. It is perfect for dinner parties, family meals, and delicious leftovers. The pork turns out looking lovely and tasting fabulous.
Serve with a crisp green salad, potatoes or roasted vegetables!
Whisk together the olive oil, soy sauce, garlic, and mustard in a bowl. Place the pork loin in a large sealable plastic bag and pour in the marinade.
Marinate in the refrigerator at least 8 hours before cooking.
Preheat an oven to 350°
Transfer the pork loin to a baking dish; pour marinade over the pork. Surround the pork with veggies, making sure the garlic cloves are nestled in the center of the veggies, not touching the pan.
Cook the pork is just slightly to longer pink in the center, 50 to 60 minutes.
Use an instant-read thermometer inserted into the center should read about 145°F
