This is a simple recipe and yet it hits the spot when you want to make something tasty while maintaining your magickal focus. It’s also very appealing when it comes out of the oven. You may leave our family wondering if you hired a professional to cook dinner.
Preheat oven to 425°
In a bowl combine the oregano, paprika, garlic, sea salt, and ground black pepper. Next, season the chicken breasts with the oregano mixture. Lightly spray the baking sheet with cooking oil or coat with Ghee. Place the breasts on a baking sheet.
On top of each chicken breast in a baking dish and top with spinach leaves, onion, marinara sauce, basil and a sprinkle of Parmesan to taste.
In a large bowl, toss the broccoli with oil and salt & pepper. On another baking sheet arrange the broccoli in a single layer. If you have leftover onion slices you can add them to the sheet as well.
Place both baking sheets in the oven and bake approximately 15minutes, or until chicken is cooked through and the broccoli is tender.
Serve chicken topped with fresh basil with the roasted broccoli on the side.
Notes: If you would like to use your left-over marinara sauce you can cook some pasta while you wait for your chicken and broccoli to roast. Serve your pasta topped with the left-over sauce and a sprinkle of parmesan cheese with your broccoli and chicken.
