Easy Beef Lo Mein
If you love Chinese food but want to get away from all the extra calories, this is a great recipe to satisfy your need. It’s easy to create and absolutely enjoyable.

Easy Beef Lo Mein
Ingredients
- 1 pound green beans trimmed and cut into 2-3” pieces
- ½ pound carrots sliced
- 2 cups green onions sliced
- 1 ½ pounds lean flank steak
- 1 tablespoon sugar
- 2 tablespoons low-sodium soy sauce
- 1 ½ tablespoons rice wine
- 8 garlic cloves pressed
- 1 pound spaghetti
- 2 ¼ cups beef broth
- ½ cup soy sauce
- 2 ½ tablespoons cornstarch
- 3 tablespoons rice wine
- 1 ½ teaspoons sugar
- 2 teaspoons dark sesame oil
- ½ teaspoon ground fresh chili paste with garlic
- 2 teaspoons peanut oil divided
- 3 cups shiitake mushroom sliced
- 3 tablespoons fresh ginger peeled & minced
- 1 ½ tablespoons garlic pressed
Instructions

Prep green beans, carrots and green onions, and set aside. Bring a large pot of water to a boil over high heat.

While you wait for the water boil, combine steak and next 4 ingredients, up to the garlic. Combine well, and set aside.

Add noodles to boiling water. Cook according to package directions & drain. Rinse pasta under cold water, drain & set aside.

While the pasta cooks, coat a large nonstick skillet or wok with 1 tsp peanut oil; place over medium-high heat until hot. Add steak mixture; sear the steak on all sides, until brown. Spoon steak mixture into a bowl; set aside. Wipe skillet with a paper towel.

Combine beef broth and next 6 ingredients (through the chili paste) in a bowl. Stir well; set aside. Heat remaining oil in the skillet over medium-high heat. Add remaining ingredients; stir-fry 2 minutes. Add broth mixture, green beans, green onions, and carrots. Bring to a boil; cook 5 for minute or until sauce thickens, stirring constantly. Return steak to pan, toss & heat through.

Enjoy topped with a drizzle of dark sesame oil!
