Easy Roasted Pork Tenderloin Marinade

Ingredients
- 1/4 cup olive oil
- 1/2 cup soy sauce
- 3 clove garlic Pressed
- 1 tablespoons Dijon mustard
- 1 2.5 pound boneless pork loin roast
- 1 Carrot trimmed
- 2 Onions rough chop
- 8 Whole Garlic Cloves whole
- 2 Celery stalks trimmed
Instructions

Whisk together the olive oil, soy sauce, garlic, and mustard in a bowl. Place the pork loin in a large sealable plastic bag and pour in the marinade.

Marinate in the refrigerator at least 8 hours before cooking.

Preheat an oven to 350°

Transfer the pork loin to a baking dish; pour marinade over the pork. Surround the pork with veggies, making sure the garlic cloves are nestled in the center of the veggies, not touching the pan.

Cook the pork is just slightly to longer pink in the center, 50 to 60 minutes.

Use an instant-read thermometer inserted into the center should read about 145°F
I didn’t have a pork loin, but had a big pack of pork loin chops. The marinade worked wonderfully. I baked the chops for about 35-40 minutes at 350F . My partner gave these two thumbs up. Love the sheet pan veggies with it. Will definitely make these again. Maybe throw a little fresh thyme on it when it’s available.
