Flavor Explosion Ham and Vegetable Frittata Cups

Ingredients

  • 4 Eggs large
  • 1/3 Cup Zucchini diced
  • 1/3 Cup Red Onion diced
  • 1/3 Cup Red Bell Pepper diced
  • 1 Garlic Clove pressed
  • 4 oz Ham sliced about 1oz each slice
  • 1 teaspoon Coconut Oil
  • Olive or Avocado oil optional
  • 4 oz Goat Cheese optional
  • Quartered cherry tomatoes and Basil leaves optional

Instructions

  1. Preheat broiler to 450°

  2. Heat a small sauté pan over med-low heat and add coconut oil. Add vegetables to the pan and sauté until just about tender. Add pressed garlic, and sauté another 60 seconds. Remove from heat and allow to cool.
  3. Meanwhile, lightly grease standard size muffin tin with a paper towel and oil. Lay a slice of ham into each cup.
  4. In a medium bowl whisk the eggs, and add vegetable mixture, and goat cheese. Pour even amounts of the egg mixture into the prepared muffin tins. Place muffins tin about 6 inches beneath the broiler and cook for about 5 minutes, or until eggs have set. Top with tomato and basil leaves if desired.

  5. Allow the muffins to set for 1 minute before enjoying!
