Easy Cheese Pie

Think of this as a grilled cheese your family didn’t see coming. I first had something like this at the Renaissance Fair my Mom, Sister, and I would visit annually when I live in CA. The booth that served “Cheese Pies” was our first food stop of our trip and I never forgot them. After my mother died I moved to PA, but I kept this dish in mind and re-created it at home on cold days. This is perfect when you want something quick, without it being bland or boring. Here is my own version of the Cheese Pies

Ingredients

  • 2 Slices of Your Favorite Bread
  • 1 T Mayonnaise
  • Shredded Cheddar Cheese
  • Shredded Mozzarella Cheese
  • Tomato sliced very thin
  • Bacon pieces or crispy strips
  • Red Onion sliced very thin
  • Salt & Pepper to Taste

Instructions

  1. Heat a cast iron pan or heavy skillet on med to med-high heat.
  2. Spread the Mayonnaise on one side of each of the slices of your bread.
  3. Place one slice of your bread, mayo side down, in your pan and begin adding your ingredients (in even layers) from Cheddar cheese to Mozzarella cheese.
  4. Top with remaining slice of bread, mayo side up and allow the cheese to melt while the bread toasts.
  5. Carefully flip the pie to toast the opposite side. This only takes a few minutes and you will need to adjust your heat as needed to make sure your bread does not burn.
  6. Remove from the pan, allow to rest for about 2 minutes and enjoy!

Recipe Notes

Try adding other ingredients to this recipe, like thinly slice salami, pepperoni, turkey, spinach, sun dried tomatoes, etc.
I have made MANY variations without disappointment. ENJOY!!!
