I am not one for eating many foods that are prepared, prepackaged or processed… BUT this recipe is one of my exceptions. I loved this recipe long before I joined the Whole Foods Movement and I think as long as it is an occasional meal we will be a-okay!

Momma's Tater Tot Casserole
This is a fun recipe I make when I am in the mood for something hot and hearty.
Prep Time 15 minutes
Cook Time 35 minutes
Total Time 50 minutes
Servings 6
Ingredients
- 2 Chicken Breasts cut into bite size pieces
- 2 C Broccoli Florets
- 2 C Cheddar Cheese
- 1 Glove of Garlic pressed
- 2 tsp Cooking Oil
- 1 Large Onion Chopped small
- 1 Package Frozen Tater Tots
- Salt and Pepper to taste
Instructions
-
Press the garlic and set aside. Preheat your oven to 375°.
-
Heat a large skillet and oil over med-high heat. Brown chicken pieces. Add onion and cook about 5 minutes. Add the Garlic and cook an additional minute. Turn off the heat.
-
In a deep casserole/baking dish (a 9"x9" works well), evenly layer all the ingredients in the following order: Tater Tots, Broccoli, Chicken mixture, cheese.
-
Bake at 375° for 35 minutes or until the center is hot.
-
Serve with a crisp green salad and ENJOY!
Recipe Notes
If you have leftover tater tots and cheese add a final layer on the top. Hold off on the last little bit of cheese until the last 5 minutes of cooking. This will allow the top layer of tots to crisp up.
