Paleo Breakfast Recipe, Gator Eggs

I know many of you out there are looking for healthy breakfasts. I also know many of you are looking for low-carb & Paleo options that satisfy. Even more so, I know you all want a little MAGICK for breakfast!
I have tried many variations of this recipe and after much tweaking, I find I enjoy this one the most. This recipe is simple and will leave you satisfied during your morning rush. YUM!

Gator Eggs, A Paleo Breakfast Recipe
Ingredients
- 2 large avocados halved & pitted
- 4 medium fresh eggs
- 1 shallot minced
- Salt & Pepper to taste
Instructions

Preheat oven: 425°

Remove 1-2 tablespoons of avocado meat from the center of each avocado half. Use a small amount of salt and pepper to season each half.

Crack your eggs and fill each avocado half with one egg. Season the eggs with salt and pepper, then sprinkle liberally with minced shallot.

Place filled avocado halves on a muffin tin and bake for about 10 minutes, or until the whites of the eggs are just solid.

Remove from the oven and allow to stand 1-2 minutes & ENJOY!
Recipe Notes
Avocado – A soothing relaxer. Eat Avocado when your Magickal intent is focused on personal beauty. You may also serve Avocado to a potential lover to put him/her at ease.
Eggs – Rejuvenation & Rebirth. No wonder eggs are a preferred food in the morning. Eggs are also great psychic cleansers and help absorb negative energy.
The Eggs and the Avocado combo is the perfect Magickal start to your morning.

This sounds fantastic and I love the precious name! Can they be left in the oven longer if you prefer your eggs well done? Or does this upset the avo and shallots?
