Slow Cooker, Vegetarian Black Bean Soup

Not only is this a tasty vegetarian recipe, its fast and easy to make.

Ingredients

  • 1 lb dry black beans
  • 1 lrg Onion Chopped
  • 2 Jalapeno Peppers seeded & diced
  • 6 C Vegetable broth plus additional if needed
  • 3 Cloves Fresh Garlic pressed
  • 1 tsp Cumin ground
  • 1 C Salsa
  • Salt & Pepper to taste
  • Sour Cream
  • Chives minced

Instructions

  1. Combine all the ingredients up to salsa, in your slow cooker.
  2. Cook on High for 4 hours. As the beans cook, you may need to add additional broth so it does not dry out. Reduce heat to Low, and continue cooking for 2 hours.
  3. Use a hand blender or traditional blender to puree ½ of the soup. Add puree to the slow cooker.

  4. Reduce heat to warm until you are ready to eat.
  5. Serve topped with Sour Cream, and chives.
