Festive Strawberry Layer Cake

These cakes are perfect for your holiday backyard BBQ or next dinner party. They are easy to make and will impress your family, friends, and guests. Using simple ingredients and making each cake individual gives an elegant flair to an old-time carnival favorite.

  • 1 Large Egg
  • 2/3 Cup Whole Milk
  • ¼ Teaspoon Salt
  • 2 Tablespoons Sugar
  • 1 Cup All Purpose Flour
  • ¾ Teaspoon Baking Powder
  • 1 Quart Vegetable Oil for frying
  • Confectioner’s Sugar for Dusting
  • Whipped Cream
  • Slice Strawberries


  1. Heat oil in a heavy bottom 8-10” pot to about 375°
  2. Meanwhile, beat the eggs, add the milk, and then slowing incorporate the dry ingredients. Mix until smooth, remember to avoid over mixing. The batter should be slightly thinner than pancake batter so it will easily flow through a funnel into the oil. If you need to add more milk you may do so to reach the desired thickness.
  3. Oil your funnel, and cover the whole with your finger as you fill it with batter. Hold your funnel over your hot oil and release your finger. Slowly pour in your batter in a circular motion to create a cake that is about 6” in diameter.
  4. When the bottom side is golden brown, carefully flip your cake to cook the other side.
  5. Remove from the oil and drain on a paper towel. Once you make 12-6” cakes you can begin layering your cakes, on individual plates.
  6. Layer: 1 cake, strawberry slices, the whipped cream, and repeat to make two layers. Finally dust with powdered sugar, top with one whole strawberry, and serve immediately.

You can also add fresh blueberries to the layers to create a Red, White and Blue theme!
